I really do love to cook, so thought you might like to have two recipes, one chicken, and on vegetarian, that my entire family likes. And believe it or not, that includes my rather particular 4 year old. Here’s a recipe that is so ridiculously easy that I’m almost embarrassed to put it up. It doesn’t have an official name, but we call it Kookalani. I suppose a more proper name would be Greek Seasoned Chicken w/Bow Tie Pasta.
Ingredients:
2 cups cooked chicken (sometimes I use pre-boiled chicken that I’ve previously cooked and frozen, other times I pan sautee the chicken in homemade chicken broth until it’s done.)
1 can diced tomatoes (I like petite diced if I have them around)
2 T Cavender’s Greek Seasoning
8 oz. Farfalle (bow tie) pasta
Directions:
In a skillet, combine the chicken, tomatoes, and seasoning. Cook until heated through. Meanwhile, boil the pasta according to package directions. When done, drain pasta. Serve chicken mixture over noodles.
(I told you it was easy) But it is super tasty!
And here’s my favorite Vegetarian Chili Recipe:
Ingredients:
1/2 bag Morningstar Farms pretend ground beef
2 cloves minced garlic
2 green peppers, coarsely chopped
1 onion, coarsely chopped
28 oz. diced tomatoes
2 cans light red kidney beans (or you can use dried by following the directions for preparation)
2 T chili powder
1 tsp cumin
1 tsp pepper
Directions:
Combine all the ingredients. If you use a slow cooker it takes about 4 hours on low. If you do it on top of the stove it only takes about 1 – 1.5 hours on low. Yummy and delicious!

One of my favorite cold weather go to healthy recipes is Slow Cooker turkey chili. Take pound of ground turkey and toss it in the cooker. Then add a can of drained black beans, a can of solid packed pumpkin and a jar of Aldi’s mild Salsa ( this is the only brand I use because it is very mild and my son will often complain that things like barbeque sauce hurt his tongue, but this stuff he loves). Cook it on low for 4 hours. . Sometimes I serve it with brown rice, sometimes with corn bread. It’s quick, healthy, low calorie and nutrient dense.

Chili is certainly a favorite of ours, as is homemade vegetable beef soup. Of course, we like them both quite spicy too. That makes them all the better in the cool weather.

youngest and watched this past season of Top Chef and one of the contestants, who kept winning challenges, cooked very simple things (maybe not simple like you and I would think simple, but simple in chef terms – easy process, few ingredients). The chefs that cooked with VERY complex layering (lots of ingredients) kept getting upset that the judges picked him – and the judges would reply – in the end it is taste that matters (I would add ‘healthy’ in there too).

Where do you find the greek seasoning? Can you find it in a Walmart?
They have it at our Wal-Mart which is saying a lot since our Wal-Mart isn’t the best I’ve seen!

I make something very similar to your Greek chicken recipe, and thought I’d mention some of the many variations that are also good (but probably less kid-pleasing). You can add a few handfuls of fresh spinach a few minutes before serving. You can stretch the chicken and add fiber with a drained can of chick peas (garbanzos). I’ve made this for adult company with the addition of greek olives and a little feta, using whole boneless chicken breasts. And I got oohs and aahs serving the adult company version on grilled polenta triangles rather than pasta. Any way you make it, it’s fabulous.
Mmmm, will definitely add these to my arsenal!
