Blueberry Morning

I thought I’d share my blueberry muffin recipe with you. I didn’t go to church services this morning because our big van is in the shop and we don’t all fit in John’s car. So to keep myself occupied, I made three dozen blueberry muffins using the blueberries we picked last weekend.

This recipe is not low in calories, but it is low in fat. One muffin probably has about 200 calories, but because I use my freshly milled whole wheat, they are very filling. You can use white flour or whole wheat flour.

The sucanat is a natural form of sugar. It’s brown and not processed very much at all. It’s sweeter than regular sugar and has a lovely flavor.

Diane’s Whole Wheat Blueberry Muffins

Ingredients:

  • 1 3/4 cups whole wheat flour
  • 1/3 cup sucanat or sugar
  • 2 t. baking powder
  • 1/8 t. salt
  • 1 beaten egg
  • 3/4 cup skim milk
  • 1/4 cup plain applesauce
  • 1 cup blueberries

Directions:

Preheat oven to 350 degrees. Combine all the ingredients except the blueberries and mix together. Fold in the blueberries. Spoon into muffin cups and bake for 15 – 20 minutes or until done. I usually get 15 muffins from this recipe.

    They certainly do look tasty. I don’t eat gluten though, so I would just go for some fresh blueberries…so delicious.

    When I first try a recipe – I reduce the sugar by half – for anyone else that does this routinely – doesn’t work with this recipe – does need the full amount listed by Diane. I suspect sugar has already been reduced (maybe many times) from the original recipe.

    I cook with applesauce (instead of oil or butter) regularly. And I use unsweetened applesauce. (I suppose using sweetened might mean the amount of sugar could be reduced.)
